Someone asked for some recipes from my veg kitchen, so...there we go!
Here's the recipe for a very simple yet delicious vegan apple pie. Enjoy :)
Vegan Apple Pie
Ingredients
3 cups of flour 00
1 cup of brown raw sugar
1 tablespoon baking vanilla cake
1 teaspoon of cornstarch
1 cup and 1/2 of vegetable milk (I use soya milk)
2 beautiful chubby apples
1 cup and 1/2 of seed oil
1 pinch of salt
ground cinnamon as you like
Procedure
In a bowl, combine milk with sugar and stir well. Add the salt, cinnamon, starch and mix again. Then add the flour, baking powder and oil, stirring constantly: the mixture should be soft and creamy (if it is too dry, add more milk, if too liquid add some flour). Peel and cut into large checks 1 apple, then pour in the mixture and mix again. Pour the mixture into a baking pan (I use parchment paper previously moistened, so it adheres well) by placing it in a uniform manner and decorate with the second apple, peeled and thinly sliced (I created a sort of little heart in the center).
Little trick: apples decoration tend to dry too, so I cover them with some brown sugar, which melts in the oven creating a very good "caramelized" effect.
Bake in pre-heated oven at 180 degrees and cook for about 50 minutes. When you think it is cooked (gold and puffy surface) immerse the classic toothpick or the tip of a knife in the middle and once extracted be sure it's not wet.
